I thought it would be fun to make these Inside-Out Carrot Cake Cookies for this month's challenge and see if I liked this slightly more portable version just as much.
The good news is, these cookies are pretty simple to put together and extremely tasty. The bad news is that when I made mine they really flattened out and spread. I don't know why - but I suspect that perhaps it is time to check the temperature of my oven again and see it that was the culprit. Either way, as I said, these taste really good, so eating them up, thin or not, really didn't matter in the end.
They look fabulous! If you didn't say they weren't supposed to be flat, I'd be none the wiser. I'd eat them all ;-)

I hope this doesn't sound bad, but I am so glad that yours are flat, too! I made mine and they spread like crazy. I just used a cookie cutter to cut out the centers and sandwiched them together. They were tasty, but not the prettiest. I wonder where we went wrong?

I would really have no idea that this isn't the way they were "supposed" to turn out...they look beautiful to me! I only like carrot cake in small doses, so this may be the perfect recipe for me :)

I have seen these a couple of times now. I think my mom will love them. Bookmarked for when she comes in April.
