I'm blogging from my parents house on a little weekend getaway (ok, so it is technically not the weekend anymore, but there ya go) so this is going to be short and sweet -- just like this week's recipe pick coming to us from Michelle in Colorado Springs the … Summer Fruit Galette.
Now, to be honest, I am somewhat tired of fruit. Nonetheless, I liked the fact that this choice left the fruit option pretty wide open and since I really like making galettes, I was pretty happy with this week's recipe.
I really like Dorie's pie crust recipe since the texture and flavor are fantastic. It is still a bit of a challenge to me though since it is a crust that requires careful handling and treatment. I let mine get a bit too warm while I was preparing the fruit and it allowed some of the butter in the crust to melt, causing the finished product to lose some of its proper texture - but it still tasted great.
I chose to fill my galette with fresh peaches from the Farmer's Market. It was really quite easy and fun to make. I brought it to my parents house to share with the rest of the family since they all love baked peaches even more than I do. Oh, and just so I don't forget to tell you, I did choose to make mine in kind of a rectangle instead of the circle. It left a bit less room for fruit and a bit more room for custard, which ended up being just right for me!
Make sure to check out what the other's in the Tuesdays with Dorie crew were up to this week with their Summer Fruit Galettes and as always, you really should get your copy of Dorie Greenspan's book Baking: From My Home To Yours!

clever! i would have left more room for the custard had i known that it was so packed in there to fit all the custard! RAWR
love your rectangle rendition of it anyway!
This is a little different from the galette I'm used to but it does look really good! Hah, you're such an anti-fruity :P I bet you'll make a special request for chocolate next TWD, hee :)
Beautiful galette and I love the whole peaches with custard idea. Have fun at your parents.
Wow, that looks absolutely fantastic. I wish I had used peaches in mine too!
Glad you liked the custard. And I agree, chilling is the key. It is so hot in Northern Germany, the butter begins to melt and roomtemperature, which is now about 25 °C.

Mmm, fresh farmers market peaches....sounds great!! It looks wonderful! I guess you'll be really looking forward to the black and white loaf cake, then huh? Nice change of pace from all the fruit desserts!!

So smart to leave room for exra custard - mine just went everywhere!!
Love your the shape of your galette. Peaches do sound pretty yummy!
Fruit is for snacks, not desserts! Love your rectangle, the more custard the better.
How pretty - looks yummy!! Hope you've had a great "weekend"! :)
Looks very beautiful and tasty. I forgot to sprinkle powdered sugar on mine...well, actually what really happened was that Matt was standing by waiting for it to cool down, finally could not wait any more and said, "I'm cutting this NOW, okay?" It was gone before I could remember to sprinkle anything! So, it is really nice to see what it would look like with the powdered sugar sprinkled on it...yours looks really really good.
I love the shape of your galette! I used peaches, too. Great job!
that looks lovely and summery!
That looks really tasty. I like the rectangle.
Looks perfect (as always) Holly! I love the square thing you have going on too, as well as the powdered sugar. GENIUS!
That's what I needed to do, leave room for the custard and then it wouldn't have leaked! Your galette looks delicious!
Wow! This looks great. Love the square shape and the perfect fruit halves. Looks so delicious!
yuuum! It looks delicious! Great job!
Your galette looks great! I think leaving more room for custard is a great idea! I used peaches too and thought it was delicious.
Beautiful! The curves of the peaches look great on the square crust.
Looks like no relief from fruit for the next couple of weeks at least--banana loaf and blueberry ice cream. I love your rectangular version. Anything that facilitates more custard is awesome.
Looks good to me! Sounds like it was enjoyed, too. Great job!
Absolutely PERFECT galette! I love the shape and the way the fruit is just nestled in there!
It looks great. I liked the custard a lot too. Hope your having a good time.
Square! I like it!
Rectangular? Oh thats just genius! I could have done with more custard myself. Next time I'll go rectangular too. LOL. Great job!

I admit, it is Thursday and I still haven't made mine, but yours is similar to what I plan to do. Maybe I better just break out the food processor now and get moving.
Your rectangular peach galette looks so delicious! Enjoy!
