TWD: Milk Chocolate Cupcakes


Although this week's Tuesdays with Dorie recipe is technically for Milk Chocolate Mini Bundt Cakes (as chosen by Kristin at I'm Right About Everything) I didn't have the right pan and really can't purchase another pan right now (I'm pretty sure my husband would consider some sort of mayhem at this point if I try to bring anything else into our kitchen).

I instead just tried to make the batter into cupcakes, which worked fine with just a little bit of sinking in the middle of the cakes. I also chose to just dust them with a little powdered sugar and keep things simple for serving.

The only other change I made to the original recipe was to follow Dorie's directions in the Playing Around section for using buttermilk in the batter. The flavor of these cakes was really quite light and delicate without too much of an overwhelmingly chocolatey flavor at all. In fact, I was reminded most of the flavor of most red velvet cakes I've had which don't have too much of a pronounced flavor either - somewhere in between chocolate and vanilla. They were tender and we enjoyed them, but they weren't really a favorite of ours. I imagine with the addition of the nut swirl and the chocolate glaze they have more flavor too them.

LOL LOL I think husbands of the TWD or the DB, must be all alike then! LOL I'm with you on the mayhem bit! LOL

Great change nevertheless... creativity is mother of husbands forbidden molds! lol

Your cupcakes look so pretty. I thought about looking for mini bundt pans, but, like you, thought the hubby might freak! I have pans in the kitchen and pans in a closet in a spare bedroom. Pans and cookbooks...I can resist!

Oh no, I would have hoped it would have a more pronounced chocolate flavor. They do look very pretty though! :)

These came out differently but just as appealing. They have a lighter look which you were going for. I have to try these also. Isn't it wonderful how one recipe can provide us with so much good variation?

Kudos for making this work without buying another pan :) I can usually resist new pans, it's cookbooks I struggle with! They look wonderful and I'm glad you liked them, even if they weren't a favorite.

LOVE milk chocolates. I cannot believe that I missed this recipe in her book. This ALWAYS happens to me - I think I've read the baking book so that I know when to refer to it, and every once in a while, the TWD group surprises me with something new that I never found in the book myself! eheh
